spicy brocccoli soup

Ingredients
olive oil1 chile (optional)2 leeks2 med onions4 carrots2parsnips1 small swede turnip (orange)500grammes broccoli (fresh or frozen)i can tomatoes2 stock cubes2 pints(ish) water100grammes red lentilsseaoning
Directions
chop leeks and onions and fry in oil until translucent.
chop chile and add to pan (use more or less depending on strength required)
chop carrots, parsnips and turnip and add to pan.
add water, stock, seasoning, canned tomatoes and lentils and bring to a fast boil.
cover with a lid and turn down to simmer for at least 30mins.
once cooked through either liquidise or, for a rustic soup, mash with a potato masher.
makes about 16 soup plates
very filling, cheap and nutritious!!!

    Loved this soup. Very tasty and filling. I live on my own so bagged up the soup into 8 hearty (2-cup) portions and froze it. It tasted just as delicious after it had been defrosted.
    Recipe forgot to mention when add the broccoli. I put it for the last 20 mins of simmering. Also added more water.
