2 cups fresh basil leaves (or more)1 tsp salt½ cup olive oil ½ Tblsp grated Parmesan cheese2 Tblsp pine nuts 2 Tblsp grated Romano Pecorino cheese2 cloves garlic, lightly crushed 3 Tblsp softened butter
Blend basil, olive oil, pine nuts, garlic cloves and salt in the blender and mix at high speed until ingredients are evenly blended
Pour mixture into a bowl. Add the two cheeses and beat together by hand
Beat in softened butter
Add a tablespoon or so of the hot water from the pasta to the pesto
Toss pesto with the pasta
