Flax Oat Raisin Apple Nut Muffins

Ingredients
1 1/2 c. flour3/4 c. Bob's Red Mill Flaxseed Meal3/4 c. quick oats1/2 c. packed light brown sugar1/2 c. Splenda1/2 tsp. salt2 tsp. baking soda1 tsp. baking powder2 tsp. cinnamon1/2 c. raisins1/2 c. chopped walnuts3/4 c. skim milk1 c. unsweetened applesauce4 egg whites
Directions
In a small bowl, beat together the applesauce, milk, and egg whites, set aside. In a large bowl, stir together remaining ingredients. Pour applesauce mixure into large bowl with dry ingredients and beat together with a hand mixer (do not over-mix). Fill muffin cups 3/4 full and bake at 350 degrees for 15-20 minutes. Yields 15 medium muffins.
