Butter Tarts

Ingredients
PASTRY1 lb lard5c flour1 tsp salt1 Tbsp Baking Powder1 Egg1 Tbsp Vinegar1 c. cold waterFILLING:2 Eggs (beaten)2/3 c. Margarine2 c. Brown Sugar4 Tbsp Milk1 c. Raisins (optional)2 tsp. Vanilla
Directions
PASTRY:

-Combine lard, flour, salt and baking powder, cut together with 2 knives or pastry blender until oatmeal sized crumble.
-beat egg and vinegar together and add to dry ingredients
-slowly add cold water JUST until the dough sticks together
-yields 2-9" pies with tops or 4 bottom shells

FILLING:

Add all ingredients together and whisk until blended.

Add the filling to the tart shells 2/3 of the way full.

Bake at 450 for 8 min then reduce tem to 350 and continue baking for another 15-20 minutes.

Serving Size: makes 24-36 tarts depending on preferred thickness
