Whole Wheat Pumpkin Pancakes

Ingredients
1c milk1/2c buttermilk1c pumpkin puree2 eggs4 TBS EVOO1 TBS vinegar2c Whole wheat flour4 TBS brown sugar2 TBS baking powder1 TBS cinnamon2 tsp ground ginger1 tsp ground cloves1 tsp ground allspice1/2 tsp ground nutmeg1/2 tsp salt
Directions
Reserve 1/2 c milk. Blend remaining milk, buttermilk, pumpkin, eggs, oil, & vinegar in food processor until smooth. Combine dry ingredients. Add wet ingredients to dry and stir just until combined. Let sit for 5 minutes. Add milk and stir in. Mixture will be very thick. Drop by spoonful onto hot oiled griddle and spread with back of a spoon until 1/4-1/2 inch thick. Let cook 4-5 minutes, flip and let cook 3-4 more minutes.
