French Onion Soup

Ingredients
1/2 stick unsalted butter2 TB olive oil4 cups slices onions3 - 14 oz cans fat free beef broth1 tsp thyme1 TB sherry4 slices french bread4 slices low fat provolone cheese
Directions
Cook onions in butter and olive oil until translucent in stock pot. Do not brown onions. Add broth, thyme and sherry and let simmer for 30 minutes. Put into crocks, add bread slices then top with cheese slice and put under broiler for a minute until cheese is bubbly and brown!
