Soba Noodles with spinach & mushroom

Ingredients
Soba noodles ( 1 bundle)Mushrooms ( mixed exotic punet) 100gSpinach, baby leaf or young 2 big handfulsGarlic 2 cloves or a big squeeze of lazy stuffQuorn steak strips or marinated tofu (75g)salt 7 pepperto taste1 tablespoon olive oil
Directions
Fry the mushrooms and garlic in the olive oil and set aside. prepare the noodles as per pack instructions remembering to rinse in cold water set aside. Add the quorn to mushrooms and heat through, add spinach and allow to wilt. Finally add noodles stir to combine and season to taste
