Anne's Lentil Soup

Ingredients
4 cups vegetable broth1/2 cup green lentils1 can diced tomatoes3/4 cup chopped carrots1 yellow pepper, chopped1 cup chopped celery1 medium onion-chopped3 cloves garlic, minced2/3 cup frozen peas2/3 cup frozen corn1 tsp dried thyme1 tsp dried rosemary1 tsp salt
Directions
Bring broth, lentils, carrots, onion and celery to a boil and then reduce to a simmer. Then add all the remaining ingredients. Let simmer with lid on for 30 minutes or more until lentils and carrots are tender. Flavor gets better the longer it simmers. Add salt and pepper to taste.

    I used low sodium broth and fresh tomatoes to reduce the sodium, and I also skipped the tsp of salt. But I love your recipe, Anne, and I certainly will make it again!
