Roasted Red Pepper Sauce

3 - 4 red bell peppers1 banana pepper1 shallot1/2 small yellow onion1 1/2 cups chicken broth4 tablespoons heavy creamsalt, pepper and dried basil to taste
Roast the red peppers and banana pepper till skin is charred. Peel peppers when cool. In a small pan sweat roughly chopped onion, garlic and shallot until almost translucent. Add roughly chopped peppers and cook on low for 5 minutes. Add chicken stock and simmer 15 minutes. Using immersion blender blend pepper mixture until smooth, add salt, pepper and basil to taste. Add cream and simmer a further 10 minutes. Great on fish, steak, chicken, pasta etc.
