1 Tbs crushed, minced garlic2 Tbs Olive Oil1 Chopped large onion 4 cups chopped Carrots (I normally use about a cup, but Hubby chopped the veggies this time)2 cups chopped bell pepper2 lb Beef round other stew meat, cut into 1/2 inch cubes4 Tbs Hungarian sweet Paprika (use more hot if you like spicy)1 Tbs Hungarian Hot Paprika1/2 cup tomato paste3 cups watersalt and pepper to tasteCouple of Bay leafsGarnish with sour cream (optional and not included in the calories)
Saute the onions, garlic peppers and olive oil on medium high heat until onion are translucent, add the meat and brown on all sides. Next coat the the meat in the paprika, stir in so the meat is coated on all sides. Add the can of tomato and water. Cover, and cook on medium until it starts bubbling, then turn the heat down to low. Simmer until the meat is soft (almost 2 hours). Add the carrots the last 15 mins to keep the nutrients and flavor.
Serve with pasta or Spaeztle and a dollop of sour cream on top. (not calculated in the calories)
