Cheesy Squash Dish

Ingredients
1 butternut squash1/2 cup packed brown sugar1 diced onion1 cup old cheddar cheese grated1 cup part skim mozzarella cheese grated
Directions
Cut butternut squash lengthways in half. scoop out seeds. put on a baking dish in oven and bake for approx. 45 minutes at 350 degrees. While this is cooking grate cheeses and chop onion. when squash is cooked and slightly cooled, remove flesh from skin into a large bowl. Mash. Add onion & brown sugar and mix well. Add 3/4 cup of cheddar and 3/4 cup of mozzarella and stir into squash mixture. Move mixture into a baking dish with a lid. Mix the remaining cheese together and put on top. cover and cook for 30 minutes with lid and 30 minutes without the lid. Serve and enjoy.
