Dirty Rice (Like Pappadeaux)

Ingredients
2 c. uncooked long grain rice2 T dirty rice seasoning (see below)1/2 c. onion (med. dice)1 bay leaf1 T garlic (fine mince)1 # ground meat mixture (see below)4 c. chicken broth1 T vegetable or canola oil1/2 c. green bell pepper (med. dice)Meat Mixture: Includes chicken livers, gizzards & pork in equal portions to make a pound of meat.Dirty Rice Seasoning Mix: 2 t. cayenne pepper; 1.5 t. ea. salt & black pepper; 1.25 t. sweet paprika; 1 t. ea. dry mustard & ground cumin; /5 t. ea. dried thyme & oregano leaves.
Directions
Brown the ground meat mixture in the oil. Stir in seasoning mixture and the bay leaf and sauté about one minute. Add vegetables and sauté 3-4 minutes on high heat, stirring frequently. Add the uncooked rice and broth and mix in well. Cover tightly and steam until rice is done and liquid is absorbed.

Serving Size: Makes 6 cups dirty rice or 8 3/4 c. servings
