Ingredients
Directions
12 oz. cooked medium shrimp1-2 chipotle peppers in adobo sauce1/4 cup dry red wine1/8 cup unsalted butter1 clove of garlic3 tsp. of Worcestershire sauceLimeParsley
You'll need a shallow baking dish and a saucepan.
First, put your oven rack in the middle position and preheat oven to 400°F.
Chop garlic.
In a saucepan, stir in wine, chipotles with adobo sauce (to taste - they're very, very spicy), garlic and Worcestershire sauce. Toss shrimp with sauce in baking dish and bake until shrimp are just warmed through, 10 to 12 minutes. Add butter and stir or whisk until emulsified. Sauce can be briefly simmered (with shrimp removed) to reduce it as needed.
Garnish with a few squeezes of lime and chopped parsley.
*Note: raw shrimp, with or without shell, may be substituted, but cooking times will have to be adjusted accordingly. Sauce may be doubled to serve over basmati rice, etc.
