Spinach-Cheese Bake

Ingredients
2 tablespoons butter, melted12 ounces fresh baby spinach5 ounces shredded 2% fat sharp white cheddar cheese3 ounces shredded reduced fat Monterey Jack cheese1 1/3 cups all-purpose flour1 1/2 cups 1% milk2 large eggs4 egg whites1 tablespoon Dijon mustard1 teaspoon salt (optional - see note above)1 teaspoon baking powder1/2 teaspoon garlic powder1/2 teaspoon fresh ground black pepper1/8 teaspoon ground nutmeg1/8 teaspoon cayenne pepper
Directions
Preheat oven to 350

Pour melted butter into a 9" x 13" baking dish lightly coated with nonstick spray - tilt the dish to coat. Arrange the spinach evenly over the bottom - it will be very full. Evenly scatter the top with the shredded cheeses.

Place flour in a medium bowl.

In another medium bowl, whisk together milk, eggs, egg whites, mustard, [salt], baking powder, garlic, pepper, nutmeg and cayenne pepper. Pour milk mixture into the flour and whisk to combine. Pour over the cheese and spinach mixture. Bake until set and lightly browned on top - about 40 minutes. Remove and let cool for about 10 minutes before cutting.
