L.R. Tapioca Pudding

5 cups waterpinch of salt1 cup baby pearl tapioca2/3 cup sugar4 T. Jello flavor of choice1 cup chopped strawerries fresh or frozen2 T. sugar1/2 cup heavy whipping cream1 T. sugar1/2 tsp. vanillapinch of salt
Bring water and salt to a boil. Add tapioca and bring back to a boil. Take off heat but keep warm, stirring occasionally until tapioca is clear. You can heat up briefly to keep warm if neccessary. It will take about 1 hour or a little more until tapioca is clear. Stir in sugar and jello. Stir until dissolved. Let cool, stirring occasionaly. Chill for several hours. In a small bowl, mix strawberries with 2 T. sugar until sugar is dissolved. Add to the chilled tapioca. In another bowl, mix cream 1 T. sugar, vanilla and pinch of salt. Chill in the freezer for a few minutes along with you beaters. Remove from freezer and beat cream until it holds soft peaks. Fold into tapioca.
