1.25 cups all-purpose flour.75 cup corn meal.25 cup sugar2 teaspoons baking powder.5 teaspoon salt1 cup skim milk1/4 cup vegetable oil2 egg whites or 1 egg, beaten
Heat oven to 400 degrees F. Grease your muffin pan. Combine dry ingredients. Stir in milk, oil and egg, mixing just until dry ingredients are moistened. Pour batter into prepared pan. Bake 15 to 20 minutes or until light golden brown and wooden pick inserted in center comes out clean.
