Ingredients
4 cups cubed peeled baking potato (about 1 1/2 pounds)1 garlic clove, sliced3/4 cup 1% low-fat milk2 tablespoons grated Parmesan cheese1 tablespoon stick margarine or butter1/2 teaspoon salt1/8 teaspoon pepper
Directions
Place potato and garlic in a medium saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer 25 minutes or until tender. Drain. Return potato to pan. Add milk and remaining ingredients; mash with a potato masher.
