Irish Soda Bread

4 cups white wheat flour1 tsp salt1 tsp baking soda1 3/4 cup lowfat buttermilkoil or cornmeal for baking sheet
1. Preheat oven to 425. Brush a baking sheet with oil, or sprinkle with cornmeal (I prefer using cornmeal.)
2. Mix flour, salt and baking soda into a bowl. Make a well in the center and pour in most of the buttermilk. Mix well with a wooden spoon, and your hands if necessary. If necessary, add more buttermilk until you have a soft, but not wet, dough.
3. Knead lightly and shortly on a floured surface. Shape into an 8-inch circle, and place on the prepared baking sheet. With a knife, cut a cross in the top of the dough.
4. Bake for 25-30 minutes until loaf sounds hollow when tapped on the bottom. It should be golden brown. Serve warm!
