Peanut Udon Noodles

3-4 TBSP natural peanut butter3-4 TBSP water1-2 tsp chili oil1 large green onion, chopped3 garlic cloves, mincedfrozen or fresh cut up zucchini1 chicken breast1 package udon noodles (the kind I use is pre-packaged)
Cook udin noodles.
Combine peanut butter and water and chili oil to make a paste. Cook chicken in a skillet seasoned with salt and pepper. Remove chicken from pan when done and cut into bite size pieces. Add garlic and onions to skillet cook, add chicken back in. Pour in peanut butter mixture and zucchini. Cook until everything is done. Add in cooked noodles and coat well. Serve immediately.
