Warm Grecian Salad

Ingredients
6 medium red potatoes, unpeeled and chopped3 cups whole white mushrooms2 carrots, peeled and chopped2 medium zucchini, chopped1 red onion, sliced2 red peppers, chopped4 cloves garlic, minced2 tsp olive oil1 tbsp rosemary1 tsp dried oregano2 tbsp balsamic vinegar1 tsp black pepper2 tsp red pepper flakes2 oz soft goat cheese (optional)
Directions
Preheat oven to 425F.
Mix vegetables, garlic, oil and herbs.
Pour into a roasting pan. Bake 30 minutes, stirring halfway through.
Switch heat to broiler and cook a further 5 minutes.
Transfer all to a serving bowl.
Mix vinegar, pepper and pepper flakes. Pour over vegetables and toss.
Crumble cheese over the dish and serve warm.
