Ingredients
1/4 stick of butter or margarine1/2 med onion (finely chopped)2 cups chopped linguica(Portuguese brand sausage)Paprika for color3/4 tsp salt (or to taste)Pepper (to taste)3 cups water5oz frozen baby lima beans5oz chopped collard greens (or kale)1.5 cups rice (uncle ben's works best, or any kind)
Directions
Preheat oven to 350 degrees. Add all ingredients into aluminum pan and mix together. Cover with foil and bake for 2hrs and 15min or when rice is done.

*Best aluminum pan would be the disposable aluminum pans. This recipe is for a 10.5in x 12.5in pan.

    I have a similar Jag recipe from my grandmother except it is steamed on top of the stove....I might just try backing it the next time!!!! ( It tries to stick and scorch unless watched closely on the stovetop). - 2/13/13

    Completely simple to make and tastes DELICIOUS! Very filling, too. I chopped the kale, linguica, and onion in my food processor so everything was an even texture. This is one I will make over and over again. A truly crave-able taste! - 11/1/09
