8-10 red or yellow potatoesone yellow/white onion, choppedsalt and pepper to tasteabout 1 tbs vegetable oilabout 1/2 cup water (varies with amount of potatoes)apple cider vinegar, to taste (I add more as the potatoes soak in the rest of the ingredients)
cook potatoes til tender, peel while still warm. slice potatoes and place in bowl with chopped up onion. add water, can be more can be less. add oil. add vinegar, let soak in fridge for about 1/2 hr, then taste, may need to add more vinegar if to watery tasting or more water if too vinegary. should not be dry,
