Buckeye Beans White Chicken Chili

1 box Buckeye Beans White Chicken Chili1 pound chicken breast meat, cubed1 medium onion, chopped5 cups water4 oz. can of fire roasted diced green chilis
1. Soak beans for 5 minutes in water.
2. Bring 5 cups of water, beans and onion to a boil and simmer covered for 1 hour.
3. Add chicken and seasoning packet and simmer covered for 1 hour or until beans are tender and thickened.
4. Stir occasionally to prevent scorching. Thin with water if necessary.
5. Right before serving, stir in chilies for some really fresh chili flavor.
Serving Size: makes 8 1 cup servings
