2 boneless, skinless chicken breasts2 tbsp olive oil2 tbsp lemon juice1tsp dried oregano1tsp dried parsley2 cloves garlic, finely choppedpepper to taste4 pita whole wheat pita breads, cut in halfTzatzikimixed salad greens, tomato, cucumber, and onion for topping (optional)
Place chicken breasts in a shallow bowl or pan. In a small bowl, combine olive oil, lemon juice, oregano, parsley, garlic, and pepper. Coat chicken with mixture and allow to marinate 15-30 minutes in the refrigerator.
Grill or broil chicken breasts until done (15-20 minute, or until juice runs clear). Allow the meat to rest 10 minutes before slicing. Stuff each pita half with meat, salad greens, tomato, cucumber, and onion, as desired. Top with Tzaziki.
