Spinach Mini Quiche

Ingredients
6 eggs1 cup milk1/2 cup flour1/2 tsp baking powerSalt - to tastePepper - to tasteRed pepper - to taste1 cup chopped onion1 package frozen spinachOther veggies that are in your fridge
Directions
Preheat oven to 400 F. Spray a muffin tin with Pam. Saute onion and peppers, set aside. Defrost spinach and put on paper towels to absorb water. In medium mixing bowl add eggs and milk, whisk together. Add baking power, flour, and spices to your liking. Add spinach and sauteed onion and pepper. Mix well. Pour into 12 muffins. Bake 20 - 25 minutes until set.
