Almond French Meringue Cookies

2 1/2 cups confectioners sugar4 egg whites1/2 tsp cream of tartar1 tsp almond extract
Preheat oven to 200.
Cover baking sheets with parchment paper.
Beat room temperature egg whites until foamy.
Add cream of tartar and almond extract. Continue beating.
Slowly add sugar and beat until glossy and peaks hold ~15 minutes.
Spoon into pastry bag and with round or star tip, pipe meringue onto the parchment paper.
Place in oven for approximately 3 hours - cookies should be dry and easily removed from pan.
Cool and store in sealed container.
Serving Size: 1 cookie - 1 1/2" diameter
