Apple Pie filling

18 cups thinly sliced apples 3 tablespoons lemon juice 21/2 cups white sugar 1 cup cornstarch 1 T. ground cinnamon 1 teaspoon salt 1 teaspoon ground nutmeg 5 cups water
Filling for 5 pies with 8 slices each.
1. Toss apples into lemon juice and set aside.
2. In large pot mix water, sugar, cornstarch, and spices. Bring to boil and boil for 2 minutes.
3. Add apples and return to boil. Reduce and simmer until apples are tender.
4. Divide into 5 freezer containers. Cool at room temperature for 1 1/2 hours. Freeze.
