3oz Chicken breast,4 tbsp Jack Daniels Honey Smokehouse BBQ sauce (2 tbsp for chicken breast, 2 tbsp for dressing)1/4 c low fat shredded cheddar cheese 1/4 peeled, chopped cucumber1/4 chopped avacado2 c chopped romaine lettuce1/4 c light ranch dressing, 1/4 c goya black beans1/4 c canned sweet corn
Cook chicken breast with BBQ sauce, either broil, grill or bake at 350 degrees for approx. 10 minutes until juices run clear and no longer pink inside. Layer lettuce, black beans, corn, cucumber, avocado, and shredded cheese. Mix Light Ranch dressing and bbq sauce to taste. (usually 1/4 c ranch to 2 tbsp bbq sauce) Take cooked chicken breast, slice and top salad. Drizzle with made salad dressing and enjoy.
