Chicken Tortellini Soup

Ingredients
1 TBS E.V.O.O1 cup onion, chopped8 cups fat free chicken broth2 cups torn fresh spinach2 cups diced, skinless roasted chicken light meat2 cups cheese-filled tortellini pasta3 TBS torn, fresh basil8 tsp shredded parmesean cheese
Directions
Heat olive oil in heavy 3-4 qt. stock pot. Sautee onion until soft. Add chicken broth and heat to boiling. Add tortellini and spinach. Cook on gentle boil until tortellini is done according to package directions. Add chicken & basil, heat through. Season broth with salt and pepper if needed. Dish up 8 servings of soup and top each with 1 tsp parm. cheese.
