Spectacular Sukiyaki

Ingredients

1 Cup water1/2 C soy sauce1/2 C mirin2 T sugar3 T canola1 lb lean beef sirloin cut into strips1 large yellow onion sliced into moon shapes3 carrots peeled, sliced thin on the diagonal8 muchrooms cut in half1 pkg shiritaki noodles1 14 oz pkg firm tofu cut into 1 inch cubes6 scallions sliced into 1 inch pieces
put water, soy, mirin and sugar in a small saucepan, cook and stir till sugar dissolves
make sure veggies are prepared and ready to add to pot.
Put canola in large heavy bottomed pot at med/high heat-add beef saute 2 min, turn move to side of pan.
add onions and carrots-3 min-add mushrooms.
stir veggies add the sauce and bring to a boil.
Drain shirataki, cut if desired, add noodles, tofu, and scallions to pot.
Cook until meat is no longer pink and veggies are hot ~ 10 min.
Serve w/steamed rice.
