Pesto & Mozzarella Stuffed Chicken Breast

Ingredients
12 oz boneless, skinless chicken breast2 oz mozzarella, part-skim1/4 c. pesto sauce1/4 c. panko crumbsto taste: salt, pepper, garlic salt and/or chili powder
Directions
Preheat oven to 350.
Cut chicken breasts into 3 oz. pieces. Butterfly.
Stuff each breast piece with a dollop of pesto and 1/4 of the mozzarella.
Spray small Pyrex dish with cooking spray.
Combine panko crumbs with spices to taste on a paper plate or a small bowl.
Spray each breast lightly with cooking spray, roll in panko lightly and put in Pyrex dish.
Bake at 350 degrees for 45 minutes or until chicken is done, serve.
