Chicken Parm

Ingredients
1 tbsp olive oil1 tbsp minced garlic.5 tsp ground black pepper2 tsp dried oregano1 cup fresh bread crumbs2 tbsp grated parm cheese4 boneless, skinless chicken breast halves1 cup tomato sauce
Directions
serves 4

In a shalow bowl, mix the oil, garlic, pepper, and 1 tsp of the oregano. On a sheet of wax paper, mix the bread crumbs, parm cheese, and remain oregano.

Dip the chicken into the oil mixture to coat both sides. Dip into the bread crumb mixture to coat well.

Coat a baking sheet with no-stick spray. Place the chicken onto the sheet and mist with no-stick . Bake at 400 for 5 minutes. Turn the pieces and bake for 10 minutes,, or until the chicken is crisp and golden brown.

Serve topped with the tomato sauce.

    WOW this chicken is so good. I have celiac disease so I substitued regular breadcrumbs for gluten-free and the dish was still Incredible. I will make this many more times. - 9/21/08
