Sausage & Egg Cups

Ingredients
8 Links Turkey Breakfast Links, chopped into chunks1 Med. Onion finely chopped1 Med. Red Bell Pepper finely chopped1 package frozen Spinach, thawed and squeezed dry3 oz shredded Asiago Cheese7 Eggs, beaten
Directions
Preheat oven to 350.

Spray a skillet with cooking spray. Saute Onion, Bell Pepper, and Turkey Sausage, until tender and sausage is no longer pink. Add Spinach and let cool. In a large bowl, beat eggs. Add cooled sausage mixture. Add Cheese, and mix well.

Spray a muffin pan with cooking spray. Spoon egg mixture evenly into muffin pan, filling each opening, 3/4 full. Bake at 350 for 20-25 minutes until eggs are set. Serve immediately or let cool and bag for reheating later. To reheat, microwave for 1 minute at 50% power.
