2 Boneless Skinless Chicken Breasts - Cubed2 Tbsp Cream Cheese2 Tbsp Olive Oil1 Cup Frozen Spinach1/4 Cup Nonfat Milk1/2 Cup Water1 Tsp Minced Garlic
Pour 1 Tbsp oil into medium high skillet. Cook chicken til done, remove chicken from skillet and set aside. Pour remaining oil, then add spinach and garlic, cooking for one minute. Add Cream Cheese, Milk, and Water to skillet. Cook until cream cheese has turned creamy and thickened into a sauce. Remove from heat, and pour over chicken.

This was a delicious change of pace. I used 3/4 cup of skim milk and omitted the water. I also cooked up some tricolour couscous
about 1/2 cup cooked and place that below the chicken and spinach sauce. Did not matter how runny or thin...it was a delicious change of pace. i used LITE cream cheese - 12/23/11
