Melty Nutritional Yeast "Cheese" for pizza (Farm cookbook)

.5 cup nutritional yeast flakes.25 cup cornstarch2 T flour 1 tsp salt.5 tsp garlic powder2 cups water.5 cup oil1 tsp wet mustard (I used Grey Poupon)extra water, up to one cup, to make a thick, smooth sauce that pours easily.
mix dry ingredients in a saucepan. whisk in water. cook over medium heat, whisking, until it thickens and bubbles. Cook 30 seconds, then remove from heat, whip in oil and mustard. Add some more water if needed to make a thick smooth sauce that pours easily.
Add to pizza. For the last few minutes of baking, broil to form a stretchy, golden brown, speckled skin.
Serving Size: makes enough cheese for a cookie sheet pizza or 2 round pizza crusts.
