Peas & Thank You's Soft-Baked Oatmeal Raisin Cookies

1 c. old-fashioned oats 1/2 c. whole wheat pastry flour 1/2 c. unbleached, all-purpose flour 2 t. baking powder 1 t. cinnamon 1/2 t. salt 1/4 c. organic brown sugar 1/4 c. organic sugar 1/2 c. vegan margarine (i.e. Earth Balance), at room temperature 1 t. pure vanilla extract 1/3 c. non-dairy or organic milk 1 c. organic raisins
Preheat oven to 350 degrees.
Using a stand or electric mixer, cream vegan margarine, milk, vanilla, and sugars together.
In another large bowl, combine oats, flours, baking powder, and salt together.
Add dry mixture a little at a time to the wet ingredients, until combined.
Fold in raisins.
Spoon dough onto an ungreased cookie sheet, spacing an inch apart.
Bake 10-13 minutes or until cookies are set and edges are golden brown.
Allow cookies to rest on cookie sheet for one minute before transferring to a cooling rack.
Store any remaining cookies in an airtight container.
