"Clean" Sweet Potato & Zucchini Muffins

Ingredients
1 c. oat bran1 c. millet flour2 Tbsp cinnamon1tsp baking soda1/4 tsp baking powder1/4 tsp salt1 c. light agave nectar1/4 c. brown sugar1/4 c. canola oil1 c. unsweetened applesauce3 Tbsp ground flax mixed with 6 Tbsp water1 1/4 c. peeled and finely grated sweet potota1 1/4 c. finely grated zucchini
Directions
Preheat oven to 375.
Spray 12 muffin tins with non-stick spray.
Sift first 6 ingredients in a medium bowl.
In a separate, large bowl beat nectar, sugar, oil, applesauce, vanilla, and flax mixture 'til combined.
Fold in dry ingredients 'til just barely combined.
Fill muffin tins.
Bake for 30 minutes or until an inserted toothpick comes out clean.
