Baked Pumpkin Oatmeal

Ingredients
4 cups of oats2 cups milk15 oz pumpkin puree4 eggs1/2 cup brown sugar3 tablespoons of baking powder2 tablespoons vanilla extract1/4 teaspoon salt1 teaspoon pumpkin pie spicewalnuts, raisin, other dried fruit (optional)
Directions
Mix all ingredients in a large mixing bowl.
Pour into a 11x7 or 9x13 pan sprayed with a non-stick spray.
Bake at 350 degrees for 45-50 minutes.

Serving Size: makes about 9-12 pieces depending on your pan
