Pumpkin loaf

Ingredients
1 1/3 c white whole wheat flour1/2 cup whole cane sugar (sucanant)1 1/4 tsp baking powder1/2 tsp baking soda2 egg whites1 c canned pumpkin1 tbsp cinnamonDash of ginger and all spice (to your taste)1/5 c or less water (or coffee) just until all is combined2 scoops plain unsweetened protein powder2 tsp vanilla extract or vanilla bean paste1/4 c unsweetened applesauceHandful pumpkin seeds
Directions
Mix it all together and sprinkle with a few pumpkin seeds. 350 degrees 50-55 minutes or until toothpick comes out clean.

You can do these as muffins OR in a loaf pan. Watch your cooking times with muffins. I would check them after 30-40 minutes.

Serving Size: Makes 10-11 servings loaf slices or muffins.
