Smashed Potatoes

Ingredients
Directions
12 medium, fresh russet potatoes1/2 cup of Country Crock Light Spread1/2 cup Skim MilkSalt and Pepper Sauce PanStrainer/ColanderPotato masher, or electric hand mixer.
1. Bring minimally salted water to boil.
2. While coming to a boil, peel 12 medium potatoes.
3. Dice potatoes into quarters, and rinse.
4. Once salted water is boiling, add diced potatoes to water.
5. Boil for about 25-35 minutes on medium-medium high with no lid.
6. When potatoes are soft in the centers, but not falling apart, drain.
7. After draining put drained potatoes back in sauce pan/pot, and turn to low.
8. Add Milk and Butter Spread.
9. With an hand mixer or a potato masher, mash the potatoes.
10. Add Salt and Pepper, by individual serving, for taste.
