* 1 onions* 1 bell peppers* fajita seasoning packet made with water (no oil)* 2 cups cooked brown rice* 1 can black beans, undrained* salsa* shredded chedder cheese* 8 flour tortillas
* Prepare marinade
* Slice onion and bell pepper
* marinate vegetables at least 15 minutes
* Cook brown rice (1 cup dry makes 3 cooked cups)
* heat beans in a pot
* cook vegetables and marinade over medium heat for 5 minutes
* assemble burritos -- rice, beans, bell peppers, onions, shredded cheese, and salsa in rolled flour tortilla
