Curry sweet potato, lentil stew

2 Sweet Potatoes (approx 5" long) skinned and cubed2 Medium Onions diced1 16 oz can of diced tomatoes2 Large Bell Peppers chopped8 oz Green Beans chopped1 cp Green Lentils1 Vegan Vegetable Bouillon CubeChili and Curry powder to taste
Bring 3 cups water, bouillon cube, curry powder, chili powder (I usually start out with 1 TBS of each and go from there if I want more) and the 1 cp lentils to boil. Once boiling, bring down to simmer, cover and let simmer for 10 min.
While that is simmering chop/dice the potatoes, onions, peppers, and green beans.
After 10 min add the potatoes, onions, peppers, tomatoes (juice included) and beans to the pot. Add more water if needed. Bring to a boil again, then turn down heat and let simmer for about 15 min more or until the potatoes and lentils are cooked through.
Serving Size: Makes 6, 2 cp servings
