Introduction

This is so good. Best served on a bed of brown rice. This is so good. Best served on a bed of brown rice.

Ingredients

    Curry powder, 3 tsp
    Ginger, ground, 1 tsp
    Salt, 0.50 tsp
    Olive Oil, 2 tbsp
    Garlic, 5 cloves
    Diced Tomatoes, 1 can
    Chickpeas (garbanzo beans), 2 cup

Directions

Saute garlic in 1 tbsp oil.
Add cooked beans, tomatoes, spices, and remaining oil.
Simmer for about 20 minutes.

Makes about 4 (1/2 cup) servings.

    Incredible!
    Always wanted to try curried chickpeas and was looking for a simple recipe and this was it. Used cinnamon since I did not have ginger. Thinking this will be even better the next day after the flavors have time to marry. Definitely a keeper. Thanks! - 12/17/19
