Chicken Diane with Mushrooms

Chicken Breast, no skin, 2 breast, bone and skin removed Olive Oil, 1 tbsp Lime Juice, 1/2 limeDijon Mustard, 2 tsp Chicken Broth, low sodium, 1/4 CupPepper, black, .5 tsp Fresh Chives, 3 tbsp chopped Fresh Parsley, 3 tbspSmart Balance Buttery Spread, 2 tbspPortabella mushrooms, chopped, about 1 CupBrandy 2 tablespoons
Place chicken breast halves between wax paper and pound slightly with mallet. Sprinkle each with pepper (and salt, if you're not worrying about sodium content). Heat 1 Tbsp of the Smart Balance and the oil in large skillet. Cook chicken over high heat 4 minutes each side, then transfer to serving platter. Add the mushrooms to the pan and saute for about 5 minutes. Add the chives, lime juice, brandy parsley and mustard to the pan and stir constantly for a few seconds, then add the broth. Stir until smooth, then stir in the remaining Smart Balance. Pour over the chicken and serve immediately.
