Ingredients

    1/4 cup flour
    1 tsp salt, divided
    1/4 tsp pepper
    1 large broiler fryer, cut up
    6 slices bacon
    6 small onions, whole
    1/2 lb. fresh mushrooms, sliced
    4 carrots, halved
    1 cup red Burgundy
    1 clove garlic, crushed
    1/2 tsp thyme
    1 bay leaf
    1 tsp parsley

Directions

Mix flour, 1/2 tsp salt, and pepper; coat chicken with mixture. In large Dutch oven, fry bacon until crisp; remove and drain. Brown chicken in hot bacon drippings. Push chicken to one end of pan. Add mushrooms and onions, cooking until onions are tender. Drain off fat. Crumble bacon and add to chicken. Stir in remaining ingredients (including remaining 1/2 tsp salt). Cover and simmer 1 1/4 hours until chicken is tender. Remove bay leaf; skim off excess fat. SErve with rice and French bread. Serves 4-6

    I spray the chicken with extra virgin oil before I coat the chicken with flour and place lemon zest inside, also I add oregano with the thyme pepper red flakes, bukovo marries bacon onions and mushrooms! - 1/5/14

    Very delicious. I served it with couscous instead of rice. Next time I will add a few more veggies like celery and tomatoes (I am a veggie freak, ha ha). - 6/25/12
