Amish Fudge

1 6oz package chocolate chips24 saltine crackers, rolled fine1 tsp vanilla extract2 cups sugar2/3 cup milk1 cup chopped nuts (otional)nutritional information shown with 1 cup chopped pecans and whole milk.
Makes approximately 30 servings (depends on how you cut).
Lightly butter square cake pan. Combine chocolate chips, crackers (rolled fine), vanilla and nuts in large mixing bowl. In sauce pan combine milk and sugar. Bring to rolling boil. Boil for 5 minutes, stirring constantly. Pour into dry mixture and stir to combine all ingredients well. Pour into cake pan and let cool. Fudge will set while cooling. Consistency of fudge will vary depending on what type of chips you use, I have made with milk chocolate chips, semi-sweet chips, butterscotch chips and peanut butter chips, all with good results. I also double the recipe and make in 9 x 13 pan.
