Healthy Lasagna

1/2 Pound Lean Ground beef or turkey1 Tbs whole wheat flour3 cloves garlic2 Tbs reduced fat sour cream1/2 C pumpkin puree1/4 C grated Parmesan1 Jar Prego chunkie garden sauce1 Cup 1% cottage cheese1 large egg white1/2 cup cauliflower puree4 oz no boil lasagna noodles1 cup low fat shredded cheese Colby or Mozzarella
1. Preheat oven 350. coat a 8x8 in baking dish with cooking spray.
2. For meat filling brown beef or turkey in skillet until no longer pink. Sprinkle in flour, and half of garlic. cook for 1-2 min longer. Remove from heat, stir in pumpkin puree and sour cream. Set aside
3. Put Prego sauce in bowl and mix in parmesan cheese.
4. In blender or food processor blend, cottage cheese, egg white, and cauliflower puree until smooth. Set aside.
5. Spread 1/2 prego sauce in bottom of baking dish. Layer with 2 noodles on top covering sauce completely. Spread all meat filling over them. Cover with 2 more noodles. Spread all cottage cheese mixture over them. Layer with 2 more noodles and spoon remaining sauce on top. Sprinkle with cheese.
6. Cover lasagna with foil and bake about 40 min. Remove foil and bake additional 10 min. Makes 6 servings.
