Parsley Salad

Ingredients
1 cup cooked rice (my favorite is jasmine rice)2 large bunches of flat leaf parsley, leaves coarsely chopped1/2 cup peppermint leaves, chopped fine2 cups peeled, seeded and diced cucumber1 cup diced radishes4 tbsp finely diced red or vidalia onionjuice of 2 large lemons8 tbsp extra virginolive oilsalt and pepper
Directions
Add ingredients in order given to a large bowl. Toss gently and marinate 2 to 4 hours before serving. Correct seasonings if necessary.
