Chicken, Eggplant and Artichoke Bake

1 eggplant, diced and roasted1 yellow onion chopped8 mushrooms, sliced2 cloves garlic, minced1/2 tsp. Italian seasoningSalt and pepper to taste2 boneless skinless chicken breasts, sliced into 1" pieces1/2 can (13.75 oz) Artichoke hearts (non-marinated), chopped1/2 cup low fat Mayo or Greek yogurt1 tbsp horseradish1 cup (plus 2 tbsp) Italian blended cheese, divided use2 tbsp. Italian breadcrumbs
Preheat oven to 400
Toss eggplant with olive oil, salt and pepper and roast in oven for 45 min., turning once halfway thru cooking time
Set aside
Reduce oven to 350
Saute mushrooms and onions till golden then add garlic and seasonings and cook 1 minute more
Remove from pan
Saute chicken until golden and cooked through
Add onions and mushrooms back to pan
Mix roasted eggplant, artichokes, mayo (Greek yogurt), horseradish and cheese together.
Combine with chicken and onions mixture
Spray Pam and pour into casserole dish
Mix breadcrumbs and 2 tbsp shredded cheese together and sprinkle evenly on top
Bake 30-35 minutes until golden
