Lime chicken with rice and cilantro

Ingredients

Directions
Add cooking spray or 2 tsps of canola oil to medium stock pot. Crush 2 cloves of garlic and dice one medium onion - add ingredients to pot. Place chicken breast(s) on top, cover pot, and cook on low heat for 15 mins.

Open lid and flip chicken to brown on other side. Wait 10 more minutes and remove chicken from pot. Put rice with equal amounts of water in pot. Bring to a boil for 2 minutes, then turn the flame to low after stirring. While rice is finishing cooking, shred chicken.

Add chicken to rice mixture along with cilantro and lime juice. Add salt and pepper to taste. If you'd like a soup version, you can add chicken stock at this point and simmer a few minutes more.

Serving Size: Makes a whole lot. Feel free to freeze.
